Homemade Chocolate Roasted Almond Butter

Hi foxes!

I find it a little tricky to build a steady schedule for blog posts. Still trying to master this grown up life of mine, but Ill perfect it. Its on my super long to-do list!

Today I was running around and experimenting a little in the kitchen, trying to find some yummy recipes I could share for next week. But then this happened. And as much as I wanted to build this posting schedule for next week, I just couldn't resist not posting this gem right away!

I absolutely adore nut butters and I add them to anything that wont raise a brow or make my husband complain to my mother that Im trying to poison him. So when I was looking of a new healthy way to get some nutella in my life (minus all the unnecessary additives the american version has) I decided to combine two of my favourite things. Nut butter and chocolate!

This homemade nutella gives you the healthy fats from coconut oil and almonds, antioxidants from the cocoa powder, protein from the almonds and 100% satisfaction from all of the combined!

Ok, chocolate lovers, get ready to lick your spoons off and don't forget to spread the love! on bananas, bread, cookies, oatmeal...just spread it ;)

INGREDIENTS
2 cups unsalted roasted almonds
1/4 teaspoon vanilla
1/2 cup dark chocolate chips
2 teaspoon coconut oil
1-2 tablespoons cocoa powder
1 teaspoon honey
1 teaspoon sea salt

INSTRUCTIONS

  1. Add almonds to food processor and process for 10-15 minutes, scraping down the sides as necessary. At this point the almonds should start to clump together. Continue to process until you reach smooth and silky consistency (might take up to 20 min depends on your food processor).
  2. Melt chocolate chips and coconut oil in small saucepan over very low heat. Stir consistently until completely melted and smooth.
  3. Add chocolate, cocoa powder, vanilla, honey, and sea salt to almond butter and process again until smooth.
  4. Transfer to mason jar or container and store at room temperature or in fridge. If you store at room temp, simply give the almond butter a stir before you use it.
