Acai Berry Smoothie Bowl #SundaySmoothie
Good Morning Sunday! (6:55AM)
After a wild night out for Valentines Day with a 10pm curfew (fresh baby in the house kinda life) I woke up to a very energetic morning! I have trained myself to become a morning person and finally all the hard work paid off.
I was craving something refreshing and light after our Chinese dinner last night (my weakness) so I decided to make a berry smoothie, always a winner.
I got all my ingredients together and threw it in my BLENDER. Long story short. I screwed up. My coconut water was finished yet my smoothie consistency was still too thick. I poured it into a bowl. BOWL! and thats when it all came together.
Cut some Banana, topped with my ULTIMATE GRANOLA, some chia seeds and flax seeds and Hey! Got myself a little smoothie bowl. Needless to say, it was delicious.
INGREDIENTS (serves 2)
- 2 cups frozen mixed berries
- ½ cup coconut water
- ½ cup of greek yogurt
- 1 tbs raw honey
- 1 tbs acai powder (HERE)
- 1 banana, chopped
- 4 tbs of granola
- 1 tsp chia seeds
- 1 tsp flax seeds
- Drizzle of honey
- Add frozen berries, coconut water, greek yogurt, acai powder and honey into a blender and pulse until smooth.
- Distribute the smoothie evenly into two serving bowls. Garnish with granola, banana, chia seeds, flax seeds and a drizzle of honey (other optional toppings: fresh blueberries, nuts)
- Serve right away with a drizzle of honey.
