Creamy Peanut Butter Oatmeal With Caramelized Banana

Living in a cold country has its bonuses and one of the most important bonuses are the comfort foods your body craves when its snowing outside and you wearing your fluffy socks with nowhere to go and nothing to do. LOVE those snow days.

My morning comfort food is oatmeal, hands down the most versatile food. The amount of experiments i made with oatmeal is a secret and only my husband is left with the painful memories of eating the weirdest combinations known to man kind. The things you do for love..

But peanut butter, caramelized banana and oats, i mean... you can't go wrong, right?

Ingredients 

1/4 cup steel cut oats

1 cup almond milk

1 tsp chia seeds

1.5 tbs of peanut butter

1/2-1 banana (to your sweetnes preference)

1 tsp coconut oil

dash of cinnamon

1 tsp vanilla extract (I used the non-alcoholic version)

Directions

1. In a medium-sized pot heat coconut oil and add the banana, swirl it around until it softens and then add 1/2 tbs peanut butter, combine both.

2.Add to the pot almond milk and oats, bring to a low boil and then reduce heat to a simmer, stirring often for 8-10 minutes.

2.Add chia seeds stir to combine. Remove from heat and stir in vanilla.

3. Scoop into a bowl and top with the remaining 1 tbs peanut butter and cinnamon. optional toppings banana slices, handful of bluberries.
