Spaghetti Squash Chow Mein

I must admit..i am obsessed with spaghetti squash! i substitute every grain i can for this delicious vegetable. and this chow mein is another example! #weightlossfriendly

 

Spaghetti Squash Chow Mein
Ingredients

1 large spaghetti squash                                             3 chicken breasts cut into strips (season with sea salt and pepper)
1/4 cup soy sauce
3 cloves garlic, minced
1.5-2 tablespoon raw honey
2 teaspoons freshly grated ginger
2 tablespoons Avocado oil+ 1 teaspoon to grease the squash
1 onion, diced
3 stalks celery, sliced diagonally
2 cups shredded carrots

Sea Salt and pepper


Directions

Cut a spaghetti squash in half length wise and scoop out seeds. Sprinkle some avocado oil and sea salt and place them face down. Bake at 400 degrees for 30-40 minutes, until flesh is very tender. Once done, scoop out flesh with a fork so it breaks apart into strings, set aside.

In a small bowl, whisk together soy sauce, garlic, raw honey, ginger ; set aside.

Heat avocado oil in a large skillet over medium high heat. Add onion, celery and chicken, and cook, stirring often, until tender. Stir in carrots until heated through.

Stir in spaghetti squash and soy sauce mixture until well combined, about 2-4 minutes.

Serve immediately.
